

Ma Cachette 'Cuisine'
Ma Cachette opened to the public in April 2000 mainly as a chambre d'hôte or Bed and Breakfast but offering an optional dinner. Ever since that first season dinner guests have urged us to publish a recipe book or to start a cooking school demonstrating our rather eclectic cuisine.
We have now decided to do the latter on a limited basis and as from May 2002 we will be offering several 6-day gastronomic weeks. During this period guests will be taught at least 3 full dinner menus but still allowing time to explore the beautiful Parc Livradois-Forez in which the guest house is situated. Tours to various places of interest will be organized and local markets visited in order to procure fresh ingredients for that evening's meal.
You can expect to learn to make a variety of interesting salads and other starters, main courses like Salmon served on a puff pastry cushion stuffed with spinach and napped with either a beurre blanc or Hollandaise sauce, Magret de Canard (Duck Breast) with a walnut vinegar and passion fruit reduction and a host of other dishes which have found favor with our guests.
Desserts are sumptuous and can usually be made ahead of time as many of the main courses (but not all) require last minute preparation for that special freshness and light quality.
Special attention will also be paid to the art of creating salad dressings and some other basics like choux pastry.
This course is not aimed at the gourmet cook but rather at the keen and discriminate gourmand who would like to add some fresh French influenced dishes to his/her repertoire.
